CUVÉE AUGUSTO DAL C E O TENUTA DI CORTE GIACOBBE DENOMINATION: Classic Method Sparkling Wine, no dosage GRAPES: 88% Chardonnay, 12% Durella YIELD: 40 quintals/hectare GROWING AREA: Vineyards located in Roncà, on the slopes of the Monti Lessini, near Verona, in the Veneto region. TRAINING SYSTEM: Guyot and traditional Verona pergola, planted from 3,000 to 4,000 vines per hectare. HARVEST PERIOD: The grapes are hand-picked, usually in the last week in August. VINIFICATION: The must is clarified then fermented at 13-15°C in large Austrian oak ovals. MATURATION: The wine matures in large Austrian oak ovals and French oak barrels, with bâttonage of the lees twice a week. The secondary fermentation, with selected yeasts, occurs in the bottle, and the wine ages some 50 months, followed by a further 6 months in the bottle. SENSORY PROFILE: Cuvée Augusto appears a deep yellow with subtle golden highlights, and with a long-lingering bead of pin-point bubbles. Rich and fruity, it boasts generous, multi-layered fragrances and a full body. Maturation in large Austrian oak ovals yields a wine of great distinctiveness. Harmonious and fascinating, it immediately impresses for its superb integration of fruit, yeastiness, and oak toast. The finish is clean and lengthy. FOOD PAIRINGS: Excellent as an aperitif wine, with a wide range of antipasti, first courses, and with fish and shellfish preparations. ALCOHOL: 12.5 %vol.
