Procedures for Vegan Meringue
1. Combine vanilla and sugar I until fully incorporated and free of lumps. Cover and set
aside.
2. Dry blend sugar III and Coyote Brand® GumPlete™ SH-ER-276.
3. Disperse the dry blend in water, using a magnetic stir plate with high shear.
4. Continue mixing on low speed until a homogenous and lump-free solution is obtained
(about 8 minutes).
5. Place the solution in a Hobart type mixing bowl with whip attachment. Whip on medium
to high speed (6) and slowly sift dry sugar II into the solution. Once the sugar is sifted,
scrape down the sides of the mixing bowl. Continue whipping on high speed (6) until
soft peaks form (8 minutes).
6. Using a rubber spatula, gently fold in the sugar I and vanilla mixture until fully
incorporated. Avoid over-mixing.
7. Pipe the meringue into the desired shape on parchment-lined sheet pans.
8. Bake in at 225°F (108°C) for approximately 1.5 hours. Rotate the tray after 45 minutes.
The finished meringue should be firm, crisp and dry in the interior.
9. Cool and store.
