Dry blend sugar, potassium sorbate and Coyote Brand® GumPlete™ SHX-DM-271. 2. Combine heavy cream, red raspberry concentrate1, water and vanilla extract in a Hobart type mixer. 3. On low speed (3) using a whisk attachment, slowly sift the dry blend into the wet mixture and let mix for two minutes or until fully combined. 4. Once combined, scrape down the sides of the mixing bowl using a rubber spatula. 5. Increase mixer to medium speed (6) and whip for two minutes. 6. Scrape down the sides of the bowl; continue mixing on high speed (10) for an additional two minutes. 7. Using a rubber spatula, fold mousse over for 30 seconds. 8. Refrigerate mousse for 24 hours.
