This year, the new fair for the halal market will be organized for the first time in conjunction with the
Sandwich & Snack Show. Paris Halal Summit is a trade event which targeting to help major buyers in their
Halal Sourcing tasks.
A rich content will be pointed out: thematic conferences, individual meetings between exhibitors and
visitors and the presentation of the complete analysis of the Halal sales in mass retail in 2013 made by
Solis.

The 3rd edition of the International Business Day on Wednesday, 5th
February! The morning program will consist of a press conference hosted
by Corinne Menegaux, Shows Director (10 am in the Innovation Space), a
conference in relation with the vending through the snacking industry,
hosted by Erwin Wetzel and vending associations (11 am in Vending Paris
conference area).
To conclude this international event, exhibitors taking part in the export
program, international visitors and institutions are privileged guests at the
international cocktail with free access to the VIP Club.
The cocktail will take place at 12:30 on Wednesday, February 5th.

In 2008, Sandwich & Snack Show has been creating this
event in partnership with Gira Conseil and thanks to the Ham
& Butter index©, a revolutionary analytics tool for the foodon-the-go market based on a strong product. Every year, it is
possible to provide benchmark prices for different playeurs
out-of-home consumption and also to point out the price
gaps taking into account agglomerations ‘density. In 2013, the

«The Pizza Index » has been exclusively created for Parizza in order to offer an additional economic
analysis regarding the fast food industry. New for 2014! A special focus on the Ham & Butter sandwich
consumed from vending machines whereas Vending Paris trade show 2014 is taking place at the same
time as Sandwich & Snack Show.
An increase of 7.5% since 2010 for the Ham & Butter Sandwich
Taking into account all distribution networks, the average cost for the Ham & butter sandwich in 2013 is
about 2, 71€ or an increase of 1, 26% compared to 2012.
Its price has been continuously progressing during the past three with an increase of 7, 54% since 2010.
Actually, the Ham & Butter sandwich price is growing faster than other catering sector products (see chart
below).

The Ham & Butter sandwich consumption is increasing except in independent bakeries and
petrol stations
Taking into account all distribution networks, in 2013, the Ham & Butter sandwich is more
expensing than in 2012 except in independent bakeries and petrol stations. The Ham & butter
sandwich is less expensive in supermarkets and hypermarkets, costing on average 2, 02€ in
supermarkets and hypermarkets and 2, 21€ in mini-market. The Ham & Butter sandwich is the
most expensive in “Cafés-Bars-Brasseries” even though its cost has been decreasing since 2008 on
this segment market.
The 5 major snacking trends will be developed during Sandwich & Snack Show 2014
- The move upmarket is continuing particularly on mass-market products
- The diversification becomes intensified with not less than 38 products conceptualized in the snacking in
France
- The French people nibble and/or eat more and more except the classic hours of meal
- The "customization" and the “fact times” attract more and more consumers and more and more worried
about what they eat
- The gap grows bigger between the distribution speeds of the product wished by the consumer and how
long will it takes to consume this product? The French people increase appreciably their consuming time
but are inflexible regarding their “trip time” and distribution timing.

23 concepts for the 4th edition of the Sandwich & Snack Show Academy!
Every year, the Sandwich & Snack Show Academy rewards the most innovative fast food concepts, the most up-todate and the most appropriate for developing as a franchise.
For this 4th edition, three concepts will be awarded prizes in the Snacking category.
A specialist concept in Italian fast food will receive an award in the Pizza category.

The trade journal B.R.A. Tendances Restauration will award its Concepts Snacking Trophies on 6 February at 12.00
pm on the Zapping du
Snacking. These annual awards recognize the achievements of innovative establishments which help to develop the
fast food market in France in terms of product range, interior design, marketing or management.
Following the announcement of the 2014 winners and the award ceremony, Anthony Thiriet, deputy editor-in-chief
of B.R.A. Tendances Restauration, will present an informal and professional round table on the latest trends with the
managers of the respective establishments. A good chance to source new ideas and gain insight into what makes a

The Délifrance World cup organised by Délifrance
Wednesday 5 February 2014 on the Sandwich & Snack Show
The 10th edition of the Coupe du Monde Délifrance du Sandwich, held on 4 and 5 February under the patronage
of the Michelin-starred chef Michel Roth, will have a distinct “French touch”.
The competition will see students from hotel and catering schools from across the world compete to create
sandwiches made out of
breads from Délifrance’s ranges “Maison Héritage”, “Panitaly” and “Nutrition”.
The grand final will start on 4 February 2014 in the premises of the Ecole de Boulangerie et de Pâtisserie de Paris
where the students selected to compete will gather.
The winners will be announced on the Sandwich & Snack Show on 5 February 2014 on the Délifrance stand, J043.
The main winner of the competition will be offered a ten-day training course in Paris delivered by leading
professionals in bread and pastries and in French gourmet food.

What’s up Tour
The catering industry is changing rapidly, both for consumers and caterers. The fast food sector is moving upmarket
and diversifying, in turn influencing sit-down restaurants with full table service. The latter are responding by
introducing take-away menus, making their food increasingly affordable.
When it comes to innovative catering concepts, three European cities are leading the way: Paris, Barcelona and
London.
As part of the Sandwich & Snack Show, Gira Conseil is organising a day tour of the most innovative fast food catering
concepts in Paris, including past Snack Academy award winners, on the 4th February.
During the course of the day participants will meet with company directors and concept creators to discuss their
catering concepts and development strategies. The Gira Conseil team will be on hand throughout to answer
questions about the catering (Horeca) industry.

The round table hosted by Erwin WETZEL, Director General of regulatory
affairs (EVA) will be dealing with the following topic:
“In Europe, what are the latest trends in the vending market, and are
snacks still popular?”
Nowadays, the part of hot and cold machines represents about 80% of the input into the market of total new
vending machines. Does this concept really respond to the consumers' expectations?
How can vending compete with the retail and the restaurant chains offering so-called 'healthy' lunch packages?
The round table will be gathering the directors of several national vending associations will discuss about their
respective market trends and wheter snack and food from vending machines still have future.
