1. Tonkotsu
Tonkotsu ("pork bone") ramen has a cloudy thick white broth
that is made by boiling pork bones, fat and collagen over
high heat for many hours. The broth is suffused with a hearty
pork flavor and a creamy consistency. Tonkotsu is a specialty
of Kyushu, particularly Hakata-­ku, Fukuoka (hence sometimes
called "Hakata ramen").
2. Nakasu
Nakasu is considered the busiest district in Kyushu. Nakasu is
located in the eastern part of Fukuoka City and there are
about 3,500 restaurants in Nakasu and over 60,000 people
visit every night.
3. Nakasu Ramen Isshi
Ramen Isshi is famous for Kuro-­Ramen, one of the newest
styles of Hakata Ramen topped with savory “Mayu”. Another
dish is the Aka or Red Ramen, with its addictive fiery taste.
Ramen Isshi has consistently ranked at the top for ramen in
Nakasu on “Tabelog”, the definitive customer food review
site in Japan.

In Singapore, all our noodles are made here, everyday.
So are our baos and gyozas. Because we want to use
only the freshest and finest quality ingredients.
To create balance in the menu, we have added a
series of small plates dishes that complement the
ramen, baos and gyozas.
To further enhance the dining experience, we have
also created one of the first mixology juice bars here in
Singapore. Even our sodas are made here.

The Secret to Enjoying Ramen
Step 1
Savor the aroma of the ramen that has just been served.
Step 2
Gently stir the soup and taste it. Swirl the firm store-­made
noodles well in the soup before eating them.
Step 3
Add in the perfectly complementary ground Szechuan
pepper or sesame seeds according to taste and enjoy the
new flavors.
Step 4
When you have finished about a third of the noodles, order
extra noodles or stir in our special Takana, or Chinese mus-­
tard, adjust the flavor accordingly and experience the
taste of the original Isshi.
