INSTALLATION INSTRUCTIONS
1) Inspect the crating carefully. If there are signs of damage, call the freight carrier before uncrating the units. Carefully uncrate the units.
** Important note **
Do not leave units out in the weather for an extended time period. The protective PVC
around the hood will become very difficult to remove if left exposed to the weather conditions
for a long period of time.
2) Position the hood near the actual installation site and carefully remove the crating material.
3) If a two deck oven is used, weld the 11.5”x11.5” transition onto 14”x14” collar.
4) Lift hood assembly into position and support from above using ½” all thread rods (supplied
by others). The assembly should be located ½” above top surface of oven. (See Fig. 1)
5) Loosen bolts that hold side skirts in place, slide them down until they touch top of oven,
re-tighten bolts. (See fig. 1)
6) Make sure grease filters and grease cups are installed in place before start-up
7) Until the unit is placed into service, protect the outer surface from getting scratched under
normal jobsite conditions.
OPERATION OF SYSTEM
1) After installation is complete, it will be necessary to check and balance the airflows. Use
T.A.B. ports to measure exhaust airflows, see Fig 2 for corresponding T.A.B requirements.
2) After the system has been placed into service and the balancing of airflows has been accomplished, a final inspection should be made. Check for unusual noises, excessive exhaust
or supply rates and general operations.
HOOD MAINTENANCE
1) Clean the hood canopy inside and out as needed with mild soap and water. Never use
harsh or abrasive cleaners on Stainless Steel or Painted surfaces.
2) Clean the filters and grease cup(s) daily, first washing by hand, and then placing them into a
dishwasher or by steam cleaning.
** Handle the Grease filters carefully **

General Description
Halton’s P- 2 hood is designed exclusively for Little Caesar’s to provide optimal capture performance
when used with the BOFI XLT-3270 oven models. The hood is designed to hang directly above the
pizza oven which provides an operational advantage of capturing the grease, smoke and other effluents
directly above the pizza oven outlets. By localizing the capture area the hood can efficiently capture
and effectively eliminate convective heat spillage to the store.
System Capabilities
The hood system is ETL listed in both the United States and Canada for use with the BOFI XLT-3270
oven series. The hood can be used with single, double or triple-stack configurations at the design
airflows (for both hoods) shown. The P-2 hood model includes testing and balance (TAB) ports built
into the hood, a closure panel to hide the threaded rod and ductwork connecting the hoods, and skirts
at the rear of the hoods to close the gap between the bottom of the hoods and the top of the blower
motor deck.
