DRY-AGED BEEF
Dry Aging is a natural process which was discovered during the
transportation of meat in railway wagons and openly carts. During the
maturation which takes about 14 days , a black crust is created around
the meat. This crust protects the meat from drying and bacterial
formation. During this period the meat loses 30% of its moisture and
the natural enzymes soften the muscular tissues. This process results in
a tender structure and an intense flavour.
