Our wines are fashioned around the fertile imagination of Chef Anne. We’re always on the lookout for the Next Great Wine,
as well as outstanding values, either by ruthless haggling with suppliers or by offering neglected vintages from great
winemakers. As these wines age, the prices remain the same, reflecting what we paid for them,
not their current market value. We challenge you to spot the bargains! But first, read on . . .
A NOTE ON TEMPERATURES
Our wine bottles are stored in a stone cellar, free of UV light and rapid temperature changes. If you’ve just come
home from a package holiday in Spain where you drank Rioja off the shelf in a 32˚ dining room, please understand
that this is not in the wine’s best interest. If you must drink your wine warm, kindly don’t huff and puff about how
cold our cellar is, as if that’s a bad thing. Simply treat it as it is -- a preference -- and we will gladly put your bottle in
the microwave (yes, we’ve been asked for that) or whatever you need. If you’re still not convinced that we know
what we’re doing with our £30,000 wine collection, please note these guidelines from Decanter Magazine:
STORING
“If you don’t store your wine correctly, it won’t age the way it should. A classic wine cellar is about 12˚. It should be
as cool as possible, as dark as possible and as quiet as possible.”
SERVING
“Light Reds (Beaujolais, Young Burgundy, Zinfandel) 15˚. Classic Reds (Bordeaux, Rhone, Brunello) 18˚. Most . . . .
reds in restaurants are served too warm. The bottle should be cool to the touch. If the bottle feels warm to your
palm, it’s going to be about 25˚and it’s going to taste like glue.”

Why Trimbach?
Many, many years ago, Jim had made an appointment to visit the Trimbach
family winery in the village of Ribeauvillé, in Alsace. He was greeted by Hubert
Trimbach, who showed Jim every nook and cranny in the famous estate. After
the tour, Hubert invited Jim to dinner, where the two ate, talked and drank wine
until the wee hours. They parted firm friends, and from that day on, Jim vowed
to carry the Trimbach family wines wherever he worked. Great wines like these are always a
good value – but you cannot put a price on friendship, kindness and loyalty.
