Capitol 20/Beer-Dinner Pairing
Join us on Friday, February 27 for our first
2015 Capitol 20. Chef Eric is pairing a
succulent menu with beers (see menu inside)
presented by guest Certified Cicerone Jason
McLaughlin. Cost is $55 ++ per person.

Hello Everyone!
I would like to start by welcoming all of our new members reading this letter. In
the last few months we have seen, once again, a rush of new and returning
members, and I wanted to express my sincerest welcome. I hope to meet many of
you in the upcoming months and look forward to getting to know your particular
interests, when it relates to food, of course.
I don’t normally do this, but I thought I might take a moment to recommend a few
books I've read lately. They are books that made a big impact on me as a chef
and also give a unique insight into the culinary profession.
First, Jacques Pepin, The Apprentice. A timeless story of a young apprentice and
his road to becoming one of the greatest chefs of all time. Second, Gabrielle
Hamilton, Blood Bones and Butter. A true story from the owner of the restaurant
“PRUNE”, who captures so much of her amazingly bizarre life, in a way only a
person with a master's in writing could do. Finally, Marco Pierre White, The Devil
In the Kitchen, who was the youngest ever to receive a Michelin star and is also the person who taught Gordon
Ramsay his intense personality skills. A true psychotic genius.
February is a big month with both Valentine's Day and a Beer Pairing Capitol 20. For Valentine’s Day I have created
a special prix fixe menu with Capital “L” Love in mind. I look forward to preparing this special-occasion meal for you.
Also listed in this newsletter you will find the menu for the Beer Pairing Capitol 20. I’ve enlisted the help of a friend
and certified cicerone (beer sommelier) and new dad, Jason McLaughlin. Giving him complete freedom on his
pairing decisions. I have yet to be able to work with Jason before, but have very high expectations of his ability to
pair beer with my menu.

February is upon us. January seemed
to just fly by so fast. Maybe it’s
because we have had such good
weather and it seemed to be not as
dreary as most Januarys. We are
coming off an extremely busy month,
with the State Legislature starting
and many afternoon and evening
events. Things are good at the
Nebraska Club!
Syrah is the
predominant grape
in this Rhone-style
blend, showing
flavors of blueberry
and plum up front. It
offers light-medium
body with moderate
acidity. There is a
nice finish with a bit
of pepper and
leather. A soft,
pleasant drinking wine which
serves well with many dishes,
but great with Mediterranean

February is a special month for my
family. My birthday is February 15
and my wife has hers on the 7th. It is
also the month we celebrate
President’s Day. I have fond
memories of President’s Day. We
always drew pictures of Abe Lincoln
and George Washington. I wondered why George never smiled. I knew all about
the wooden teeth, but I thought how bad could it be? So I decided to try to draw
a picture of him smiling. It was a huge mistake. I can see now why all of his
pictures are with his lips closed!
As I think of February and President's Day, I can’t help but think of our own
State Legislature. Every day I am surrounded by senators, lobbyists, the mayor
and the governor. I sometimes take these things for granted, but it really is an
awesome experience. These peopleshape and decide how our state is
operated. A good portion of our lives are in their hands. It is an honor to know
many of these people personally. I get to speak to them often and see how
genuine and approachable they are. They are trying to make a positive
difference in our state. So, if you are watching these lawmakers on television,
or if you happen to see them in person sometime, just remember that they do
an important job. Even George Washington would smile at that.
The Board of Directors of the Nebraska Club recently elected its officers, who
are listed on page 2. Board members oversee Club management in policy,
operations and performance, including closely monitoring Club finances. The
Board of Directors has 17 members, including a president, vice president,
secretary and treasurer. The board has four committees: an Executive
Committee comprised of the board’s officers, along with voluntary Human
Resources, Financial and Marketing committees.

banquet supervisor. Michelle supervises many of our daytime civic events and
