Welcome to DARUMA-YA DARUMA-YA takes its name from the traditional handmade Japanese wishing doll that keeps the owner of the doll focused on achieving their goals. One goal that will be instantly achieved is the food at DARUMA-YA. Our Soba Our soba is made from the highest grade of buckwheat and prepared with traditional 400-year-old Japanese technique. The "Kitawase" buckwheat is from Hokkaido, Japan and is grown in Seattle, Washington; where the climate is found to be best in the world. Then it is shipped back to Japan to be gently milled, then shipped to New York to be freshly prepared by our Soba master for serving. The time and process placed on our buckwheat creates the most nutritious and flavorful soba. Our Izakaya Menu An Izakaya is a Japanese Tavern where people gather to drink and eat. Our menu is designed for sharing so everyone at the table is able to sample our offerings. What makes our Izakaya unique is that we use and prepare the highest grade of local and Japanese ingredients available by the season. Condiments used for cooking include ”chi-ai-nuki-dashi” broth, "Hon-Mirin" sweet sake, "Sekigahara Tamari" soy sauce; made only with soy beans and no wheat additions, all the highest quality used in preparation to bring out the fullest umami of our dishes.
