Kazu Nomura
Born and raised in Japan, Mr Kazu Nomura started his culinary dream in
1978 at the age of 18 working in French and Italian restaurants. Eager for
more culinary experience, Mr Nomura came to Melbourne in 1985 to work
for a well-regarded Japanese restaurant. It did not take him long to fall in
love with this beautiful city and decide to settle here permanently.
Throughout the years Mr Nomura has been working in many different
Japanese and French restaurants over the past 30 years, learning the best
from each of head chef including celebrity and three-star Michelin chef
Paul Bocuse (winner of Chef of the Century award fromThe Culinary
Institute of America in 2011). In 1996 Mr Nomura decided to open his own
Japanese/French fusion restaurant located in Toorak, servicing the best
essence of each cuisine. The restaurant has earned great reputation and
become a huge success, allowing Mr Nomura to also launch his career as a
consultant within the industry. His success and experience is so well
regarded, he has also conducted cooking classes teaching young chefs and
been guiding them through their culinary career. Miyako is very proud to
be given an opportunity to meet Mr Nomura and successfully convinced
him to lead our restaurant into a new era of serving traditional Japanese
food with a little twist

Our menu is innovatively designed by Kazu and his team serving our
favourite Japanese dishes with French influence. Being one of its kind in
Melbourne, our exciting menu is certain to bring our customers a whole
new level of experience in Japanese Cuisine.
Terms and Glossary
Bonito Stock / Dashi
Japanese style fish stock made from dried, fermented and smoked skipjack tuna and Konbu*
Consommé
A type of clear soup made with richly flavoured stock
Epice
Mix Spices consist of cayenne, cinnamon, fennel seed and grounded ginger
Konbu
Edible kelps from the family Laminariaceae widely eaten in East Asia. One of the main ingredients of
Dashi*
Minestrone
A soup of Italian origin made with vegetables including onion, celery, carrot and tomato
Ponzu
Soy sauce infused with Yuzu* lemon and citrus
Ponzu Nube
Soy sauce infused with lemon and citrus mousseline
Shiso leaf
An Asian culinary herb belonging to the mint family. It is commonly used in Japanese Cuisine. Its
fragrance and taste is similar to basil, but stronger mint and spice flavour to it.
Shiso Pesto
Pesto consists of Shiso*, cashew, garlic, blended with oilve oil and parmesan cheese
