Our wine list is broken into Sparkling, White, Rosé and Red wines. We then list the wines by soil type. We believe that our wines, like the ingredients in our dishes, are greatly influenced by the place they come from and the soil in which they are grown. While our cuisine is sourced from the South, we strive to find wines that are also indigenous to the place we source them from, made with a respect for nature and true to local principles. We support local farmers as well as small growers, family producers, and naturally-made products around the world. ~Dessert Wine and Reserve Wine lists are available by request~ Limestone is made primarily from fossilized seashells, chalky in nature. These soils work like a sponge, wicking water away and storing it as reserves for the vines when water is scarce. Its alkaline nature encourages high acidity grapes to flourish. Highly valued in cool climates, this is a good place to look for austere, balanced, mineral-driven wines. Primary Rock (granite, basalt, tuff) is a term used to describe rocks being first formed containing crystalline and no organic remains.These soils usually warm quickly, hold heat well, and have the best possible drainage. Lack of nutrients and water in topsoil causes vines to suffer and dig deep for nutrients, creating more interesting, complex, and unexpected flavors in the fruit and resulting wine. Volcanic soils have two types; vent based & lava based. Volcanic influenced soils are found to be some of the most nutrient-rich for vine growth. Resulting wines are often powerful but with an earthy, ashy element, often savory and complex. Metamorphic (slate, schist) is a rock formed under pressure with many color variations and mineral make-up. Dark colors retain and radiate heat, contributing to phenolic ripening, helping develop color and ripe flavors in grapes. Often gives the wine a mineral, ‘flinty’ taste. Alluvial (clay, silt, sand) soils have good water & nutrient retention, which can translate into a more opulent style of wine. It is often found in combination with wind blown loess or loam soils. Throughout the world, these are the most prolific vine soils and a good place to look for the more fruit-forward wines on the list.
