We are specialist importers and suppliers of quality foods from Spain. Our products are aimed
primarily at food service outlets, although we do have a number of lines suitable for retail.
With offices in Stirling and Madrid, we are able to source, import and stock a comprehensive range
of authentic ingredients sourced directly from producers. Most of these producers are small or
medium sized businesses, owned and run by families who have been dedicated to the manufacture
of their products for generations.

Spanish Ham
Salt cured, air-dried ham (Jamon) is one of Spain’s most
celebrated foods, and the art of making jamon has been refined
over centuries. Jamon is made in many parts of Spain, however
the climatic conditions in some areas are especially suited to
the process. These areas or in some cases, towns, have acquired
the coveted PDO status in recognition of the distinctive
characteristics and quality of the hams produced there.
The main factors influencing the quality (and price) of Spanish Ham include:
• The breed of pig. The best ham is made from pure-bred Iberian Black pigs (Ibericos), whose meat is dark in
colour and richly marbled with fat. Cross-bred Iberian black pigs are also commonly used. Serrano ham is
made using white hybrid pigs (blancos), which make up the vast majority of the Spanish herd
• The rearing conditions and diet of the pigs. The highest quality is made from pigs which spend their lives
outdoors, with natural grazing. Jamon Iberico bellota is made from pigs whose diet is largely made up of
acorns. Cheaper ham is made from indoor-reared, cereal-fed pigs.
• The microclimate of the place in which the ham is made. Temperature and humidity are important
factors in the curing and drying of the hams and charcuterie.
• The period of maturation of the hams. This varies between a few months, and several years.
Our hams are all made in the town of Guijuelo, which is located in Castilla y Leon, approximately 160 km west
of Madrid, and 40 km south of Salamanca. Guijuelo holds PDO status for Jamon Iberico, and is one of the most
celebrated and prolific production areas for Iberian ham.
About Jamon Iberico and Jamon Serrano
Spain is a major pig-rearing country, and of its total national herd, usually about
95% of the animals are white pigs of various breeds. The remainder are Iberian
black pigs, an ancient breed native to the southern and western areas of the
Iberian peninsula. These pigs are characterised by their dark skin, sparse hair and
long, slender legs. The meat from these pigs is dark in colour, and marbled with
fat. There is also a substantial covering of fat on the hams – essential for long
maturation of the product. The pigs are ideally suited to life in the dehesa, a
protected ecosystem of open rolling grassland studded with Mediterranean oak
trees. The dehesa covers large areas of the region. The oak trees (encinas) are
managed by landowners to maximise the yield of acorns (bellota) which, during
the fruiting season of about 3 months, are the preferred food of the Iberian pigs.
These pigs, reared free-range in the dehesa, with access to unlimited quantities of
acorns go on to provide meat of the highest quality. Hams made from these pigs
are marketed with the grade “Iberico Bellota” – meaning acorn-fed Iberian pig.
Not all Iberian pigs are reared free range in dehesa: some are outdoor-reared in
grass pastures where their diet consists primarily of grass, approved cereals and
harvested acorns. These pigs are classified as “Iberico Recebo”, and, while still of
excellent quality, are cheaper than Iberico bellota.
Both these grades of Jamon Iberico are, after salt curing and air drying, hung to
mature in the ham maker’s bodega (cellar) for between two and four and a half
years.
Serrano ham, from white pigs, is made in the same process as Iberico ham,
although maturation periods are typically between 6 months and two years..
The finished product tends to be paler in colour and leaner than Iberico ham.
The flavour is excellent, but does not match the depth and complexity of jamon
Iberico.

Charcuterie of spain
Cured embutidos (sausages)
Spain’s classic embutidos are chorizo, salchichon and lomo. All of the embutidos are cured with salt, and
then air-dried to reduce moisture content. These preservative processes prolong the life of the product.
Short-cured chorizos are intended for cooking, whereas fully-dried chorizos are for slicing and eating without
cooking.
There are many regional variations and even more standards of quality, however in general terms the
differences are as follows:
CHORIZO
Chorizo is usually a
sausage made with coarsecut pork, garlic, salt and
pimenton (paprika). It usually
has a vivid orange/red colour
arising from the pimenton.
SALCHICHON
Salchichon tends to be
made from finer-chopped
pork and flavoured with
garlic and black pepper. In
appearance it is similar to
French saucisson or Italian
salami Milano.
FUET is a thin, cured pork
sausage from Catalonia. The
gut casing is usually covered
with white powder.

BUITIFFARA is a white
sausage which is a Catalan
speciality and is usually grilled
or barbequed.

LOMO
Lomo is air-dried pork loin,
cured with salt and often
flavoured with garlic and
pimenton. It is a whole
muscle rather than a chopped

Chorizo made for cooking has shorter curing/drying times, and retains a higher moisture content.
Our best-selling cooking chorizos are made in a region of Navarra, in the low Pyrenees. Among the
styles available is “Chistorra”- a thin chorizo made in lamb gut casing which, in Navarra is usually
eaten as finger-length pieces, lightly fried or grilled.

Fresh/frozen Iberian pork
Meat from acorn-fed Iberian pigs is highly prized for flavour and texture. Iberico meat is darker
than white pig meat, and is highly marbled with fat. In Spain, chefs usually serve Iberico meat
medium to medium-rare. Certain cuts are taken only from Iberico pigs, and have in recent years

Spanish Tuna
We stock canned tuna products from the family-owned business Serrats, who have operated in the
Basque town of Bermeo since 1890..Serrats are certified by the Marine Stewardship Council to produce
tuna products from sustainable fisheries.
Spain’s premium tuna is called bonito del norte. This species of small tuna (thunnus alalunga) is
caught in the Bay of Biscay by traditional and sustainable rod-and-line methods. The fish are renowned
for their pale, delicately flavoured meat. The tuna are filleted into loins, belly and neck pieces, each of
which are canned separately. The belly strips (ventresca) are regarded as the ultimate delicacy because
of their velvety, unctuous texture and exquisite flavour.
Yellowfin tuna (thunnus albacares) are also landed and processed in Bermeo. Tuna from these fish
is called Atun Claro, and because of the greater stocks and larger size of this species, the products are
cheaper than bonito del norte.
Mojama is salt-cured and air-dried yellowfin tuna. This method of preserving the fish has been used
on the Mediterranean coast since ancient times. Mojama is usually served as thin slices, often as a
savoury snack, along with almonds. It is dense, salty and has an intense flavour of the sea.
Preserved anchovies

(anchoas del Cantabrico)
Spain’s finest anchovies are produced on the north coast using fish caught in the Cantabrian Sea. The
species is engraulis encrasicholus.
Our anchoas del Cantabrico are cured and packed by CODESA, a third generation family business
located in the fishing village of Laredo (Cantabria).
These anchovies are cured in salt and then the fillets are carefully removed and cleaned by hand.
Finally they are packed in light olive oil.
Boquerones
These are marinated white Mediterranean anchovy fillets packed in olive oil and vinegar.
Chipirones
Pacific-caught baby squid, flour dusted and IQF frozen. Deep fry from frozen and serve with alioli to
create a typical tapas dish.

Coffee
Most Spanish coffee is a blend of natural roasted and torrefacto
beans, which are glazed with sugar. The ratio is usually 75%/25%
or 80%/20%. Another factor influencing the flavour (and price)
is the mix of bean varieties, with Arabica being the most expensive,
and Robusta being cheaper.

With offices in Stirling and Madrid, we have access to the full range of Spanish foods, ingredients and
wines. We specialise in managing our partner producers to manufacture products to our customers’

THE TEAM
Cameron Whyte - With a wealth of food industry experience, Cameron worked for a number of
leading UK food companies in the poultry, fish and canned food sectors, before founding Iberico Foods
in 2007. He travels regularly to Spain, attending food exhibitions and visiting suppliers’ production
facilities.
Kirsty TODD - Kirsty is the contact person for ordering, customer services, logistics and finance.
Rossana Ravalli - Rossana is responsible for customer services, accounts, order processing and
stock control.
Eva Poudereux - Eva runs our Madrid office and is closely involved in product sourcing and export
