FROM
THE
Chef’s CHEF
Recipe
With the onset of the cold winter weather
I thought you might enjoy a recipe that
is warm and hearty.
This is an old favourite of mine...
TOMATO BREDIE (serves 6)
Ingredients:
1 tablespoon vegetable oil
100g butter
1.5 kg lamb knuckles or
lamb breast chops
1 large or 2 medium onion diced
6 cloves garlic crushed
1.5 kg fresh tomato diced
1 teaspoon salt or to taste
½ teaspoon freshly ground black
pepper or to taste
2 bay leaves
1 teaspoon brown sugar (optional)
1 cube beef bouillon paste
2 medium potatoes quartered
Method
1. Heat oil and butter over medium
high heat in a large, heavy bottomed
saucepan.
2. Add meat, a few pieces at a time
and cook, turning the meat from time
to time until the meat is golden brown.
Remove and set aside. Repeat until
all the meat is browned.
3. Using the same saucepan add the
onions; reduce the heat and sauté until
the onions are soft and translucent.
4. Add the garlic, and the other spices.
5. Return the meat to the saucepan
and add the tomatoes. Cover and cook
on low heat for about 1 ¼ hours.
6. Stir in the potatoes and cook for
another 45 minutes or until the meat
and potatoes are tender. At this stage
you may need to add a little water.
7. Adjust the seasoning and add the
sugar if necessary.
8. Serve with rice.
Enjoy!

Like many other South African wine estates, Alto started out as part of a larger farm known
as Groenrivier, which was first granted by Simon van der Stel in 1693. In 1919, the then owner
Hennie Malan divided the farm vertically in order to sell half of the land to his brother-in-law.
The development of Malan's share was a co-operative venture between himself and his
son, Manie. In the next few years they set about converting this partial wilderness into a wine
farm, to which they gave the Latin name, Alto. Today, Alto Wine
Estate sports 93 hectares of land under vines and has earned
more than 70 gold medals in local and international wine
competitions.
Le Bonheur, meaning happiness, dates back to the 1790's. Hand
sorting the grapes at Le Bonheur has remained their tradition. Le
Bonheur's wines are acclaimed both locally and internationally,
and they consistently receive prestigious awards in top wine
competitions across the globe. This 163-hectare estate is situated
along the slopes of the Klapmuts Hill in the northern reaches of
the Simonsberg ward.

Van Loveren is South Africa's biggest family-owned winery. The Van Loveren vineyards have
been in the family since 1937, when Hennie Retief Sr. bought some land in the Robertson
area.
The family's philosophy of grape-growing and winemaking is based on a long term
uncompromising approach to producing only premium quality wine, maximizing the
natural varietal fruit flavours from carefully selected quality
grapes.
The Van Loveren brand has always believed in the integration

The picturesque Neethlingshof Wine Estate in the heart of the Stellenbosch Winelands is
flanked by the Bottelary Hills and Papegaaisberg Mountains. Along with the awe-inspiring
manor house, their estate is steeped in history which dates back to 1705 and distinguished
by a beautiful avenue of stone pines.
It's a place where soil, climate and vines co-exist in perfect harmony. Neethlingshof is blessed
with 13 distinguishable terroirs and by choosing the correct site;
they've been able to enhance the natural flavour and aroma
of their range of wines.
Their estate is also a member of the Biodiversity & Wine Initiative
(BWI), highlighting their commitment to eco-sustainability.
The range of Neethlingshof premium reds are subtly oaked, showing
softer tannins and greater harmony, while the Neethlingshof
premium whites exhibit pure expression of fruit.
