General
process
for liquid Tea Whitener
1 Heat water to 45 – 50 ºC
2 Add skimmed milk powder
3 Hydrate for 15 – 20 min
4 Add pre melted fat and Premitex XLN-14012 **
5 Adjust pH to 6.80 with Na-Citrate or Di Sodium Phosphate
6 Transfer to Pasteurisation line
7 Homogenise at 180/30 bar 65 – 70 ºC
8 Pasteurize at 72 ºC / 15 sec
9 Cool to 5 ºC
10 Store for min. 3 hours, ideally overnight
11 Transfer to UHT line
12 UHT treatment for 142 ºC / 4 sec
13 Homogenise down-stream at 70 ºC 180/30 bar
14 Cool to 20 – 25 ºC
15 Fill
** Premitex XLN-14012 can also be melted with the fat and added in-line during processing.
