食べ物ナンバーワン」に挙がるという状況であった。

れた。それ以前にも彼は豆腐の形へのこだわりを捨て，「トーフシェイク」というアメリカ人の好みに合った
食べ方を提示するなどして販路拡大に取り組んでいたのだが，こうした報道などもあって1990年代半ばに
は，彼が手がけてきた豆腐事業がアメリカで軌道に乗ったのだという。このようにして家畜のえさという大
豆のイメージを引きずっていた豆腐も，アメリカ人の意識変化によって受け入れられるようになっていった
のである。
