ABSTRACT We showed in the previous article [6] that Champagne, Bordeaux and Bourgogne are mature wine-producing region (wine-producing region’s market value tends toward its embedded value). In the today article, we wonder about the AOP vineyards of the Champagne, Bordeaux and Bourgogne mature wine-producing region: all of the AOP vineyards of each mature wine-producing regions are mature vineyards? The today article confirms the interest of the vineyard’s embedded value and informs us on the economic characteristics of Champagne, Bordeaux and Bourgogne wine-producing region (Bulletin de l’OIV, 2014, vol. 87, n.° 1001-10021003, p. 357-376).
