封茶 Tea Sealing Ceremony 何謂封茶? 「封茶」是府城文人雅士所創之儀俗，於每年臘月 24 日舉行。封茶是把今年尚 未用完的陳茶，或欲送禮的新茶，用封條予以典藏，並在內籤寫下自己對未來的 願許或對親友的祝福，封存入罐，藉此展現敬天惜物的精神。茶葉存封後，經歲 月催化、發酵，隨溫度、濕度甚至存放容器的不同，茶葉會漸次展現不同的風味。 五年十年後啟封，能以一杯老茶，品味往日情懷，是「封茶」最迷人的部分。 台南晶英酒店特別於 2015 年與奉茶茶館合作，擴大舉辦封茶週，除了封茶，更 有手工包茶與作茶等活動提供來賓參與，希望有更多人能藉此體會府城當代的生 活美學與人文風華。 封茶とは？ 「封茶」とは、毎年臘月（12 月）24 日に行われる台南文人が創った習わしで す。封茶は今年まだ手をつけていない古い茶葉や、もしくはプレゼントとして 送る新茶を茶筒に入れ、 「封條」 （大事な物に封をする時に使うシール）をしま す。 「內籤」と言われる紙にはご自身の未来やご友人への祝福が書き、茶筒に 茶と一緒に入れ、神を敬う気持ちや物を大切にする精神が現します。 茶葉を密封後、歳月と共に発酵し、温度や湿度や入れる容器によっても茶葉の 風味は異なります。五年もしくは十年後に開封し、風情を味わうことこそが「封 茶」の醍醐味なのです。 台南シルクスプレイスは 2015 年、特別に台南で有名な「奉茶茶館」とタイア ップし、共にこのイベントを開催致します。封茶の他に、またお茶包みやお茶 作り等のイベントをご来賓の方々にご提供し、多くの方々へ台南の生活の美し さと人文風華を体験して頂きたいです。 What is “tea sealing”? A custom founded by the refined and the educated, tea sealing was practiced on the 24th of the twelfth month of the lunar year here in Tainan. Newly harvested tea intended as a gift or any unused leaves from this year are collected and sealed in a canister with a message inside, expressing one’s hopes and dreams for the future or blessings to a friend. Once sealed, the tea leaves undergo fermentation. The temperature and humidity will vary depending on the container used, resulting in new levels of flavor complexity, refinement, and style. Many years later, once the tea has aged and the seal is broken, while sipping a steaming brew, one can reminisce about the good old days.
