Sake taste is depends on sake temperature when you drink!!
Find out your perfect temperature and enjoy the sake to the core.
These name are really typically
Japanese word aren’ t they.
Of course there are individuality of
taste variation depend on the sake
kinds. therefore, usually taste become
sharp with hot temperature sake,
become mild aroma and flavor with
warm sake and less aroma with cold
sake.
Which means you can remember that
the colder sake temperature come
with the less sake aroma.
I would like to recommend you to try
that Yusen (another drink style).
Pour sake into the Tokkuri
(ceramic sake bottle) and put them in
the pot which is filled with hot water.
This heating style make the best
tasty hot sake.
Use the microwave to heat is very
easy but I really recommend you to
try this Yusen style and find out your
best sake temperature!!

When it is getting cold and close to summer ends,
we become to want to drink hot sake.
Tobikiri-kan ・ ・ ・ more than 55℃
Our image of Atsukan(hot sake) is…
strong aroma and dry taste
father put a cup of sake into the microwave to heat
Atsu-kan ・ ・ ・ about 50℃
up and drink them little by little while staring
(can see the hot steam)
very hot sake.
Jou-kan ・ ・ ・ around 45℃
But in fact, this Atsukan is very profound.
On-kan ・ ・ ・ around 40℃
Taste of Japanese sake is totally different depends
strongest aroma with rich taste
on the temperature even the same sake kind.
Hitohada-kan ・ ・ ・ around 35℃
For example, one of my favorite Junmai sake has
can feel flavor of rice and malted with smooth taste
sharply crispy dry tests with normal temperature.
Hinata-kan ・ ・ ・ around 30℃
But if warm them up about 10℃ and drink,
sake taste is changed to smoothly mild taste.
Normal temperature ・ ・ ・ around 20℃
It is just because Japanese sake contain Onshisan
(slightly cold) mild aroma and soft flavor
which come from lactic acid and succinic acid with
Suzu-hie ・ ・ ・ around 15℃
heating.
(leave a while after take out from refrigerator) And you can realize difference in taste come from
Hana-hie ・ ・ ・ around 10℃
sake temperature.
(put in the refrigerator for a few hours)
Japanese sake has the name depends on each
Yuki-hie ・ ・ ・ around 5℃
temperature following to the left chart.
(put in the ice water and cold enough)
less aroma
