- Smelt de chocolade.
- Voeg gesmolten boter toe.
- Maak een emulsie van de chocolade en de boter en voeg één voor
één de dooiers toe.
- Voeg de ontdooide puree toe.
- Voeg rode wijnazijnpoeder toe.
- Klop het eiwit met de suiker op.
- Meng de opgeklopte eiwitten met het chocolade mengsel.
- Voeg gezeefde bloem toe.
- Vul een silicone vorm naar keuze.
- Bak +/- 30 minuten op 160°C.

- Bloemsuiker met amandelpoeder mixen en zeven
- 260 g suiker met water koken tot 118°C
- Eiwit met eiwitpoeder en 40 g suiker opkloppen
- Siroop toevoegen aan de opgeklopte eiwitten
- Als meringue 50°C heeft, “broyage” en eiwit mengen
- Alles ondermengen
- Azijnpoeder toevoegen
- Mengen tot homogeen beslag
- Spuiten in gewenste vorm, laten rusten, afbakken 12 min 150°C
Tip: Vervang witte wijnazijnpoeder door balsamico, rodewijn of rijstazijn poeder.
