Chez Laurent Restaurant. Classes are kept small
and intimate and incorporate demonstration
and hands-on participation to maximize
learning and fun.
Themes for our classes range from comfort food
to exotic cuisine, and are taught in this warm,
inviting setting by Chef Leanne Rabinowitz of
Private cooking classes, either at the school
or in the comfort of your own home, are also
available. A minimum of eight people is required
for a private lesson. Please call the school for
more information on private events.

Chicken
Fish is an excellent source
of protein, minerals and
vitamins and play a role
in maintaining a healthy,
well-balanced diet. Learn
four different techniques
to cook fish that are very
quick and easy to do and
give you tasty results. Menu
includes: Poached salmon
with white wine, tomato
and dill, steamed fillet of
trout with assorted veggies,
pan fried Talapia, Mediterranean baked cod with olives,
capers and tomato and
baked pasta shells stuffed
with ground fish and baked
in the oven.
These are our signature
dishes at the restaurant
(Chez Laurent Restaurant).
Come learn how to make
Crispelle (pasta rolled with
spinach, cheese and ham
or salmon), stuffed pasta
shells with goat cheese and
asparagus, and ground veal
and chicken cannelloni.
This is the perfect time of
the year to learn how to
make some hearty soups
that really satisfy. On the
menu: Mexican chicken
soup, Ribollita (classic Tuscan white bean soup), pear
and butternut squash, lentil
soup, and soupe au pistou
(Provencal vegetable soup
with basil pesto).
These are great one-pot
meals that really satisfy
a hardy appetite. These
dishes taste better day after
day and freeze really well.
Menu includes: blanquette
de veau (veal stew),
bouillabaisse (fish stew),
beef bourgignon (classic
beef stew) and a sausage
spinach and white bean
stew.
Bored of the same old
chicken recipe? Need some
inspiration? Then this class
is for you. Learn how to
store, cut and prepare all
different cuts of chicken.
Menu includes: braised
chicken thighs, panko
crusted lemon chicken,
curried chicken, and herb
roasted whole chicken.

This class you will learn you
will learn how to buy, store
and cook frekkeh, amaranth,
millet and farro. All of these
are delicious and nutritious grains that should be
included in your diet.
Now that Chez Laurent is
no longer, why not learn
how to make all your
favourite dishes. Menu
includes Lasagna (best in
North America!), Veau au
Citron (veal scaloppini in
a lemon cream sauce with
mushrooms), Penne a la
Vodka, Moules Mariniere
(mussels in a tomato sauce),
and our homemade salad
dressing.
Come learn to make French
bistro classics. You won’t
believe how easy and full
of flavour these dishes are.
Menu includes: French onion soup, warm goat cheese
salad, beouf bourgignon
(beef stew), and crème brule
(custard dessert with burnt
sugar crust).
This class features more

eggplant Parmesan,
veal Marsala, spaghetti
Matriciana (bacon tomato
basil sauce), and tortellini
Lorenzo (porcini mushroom
cream sauce).
Whether you are vegetarian,
vegan or just like to include
more meatless meals in
your diet this class is for
you. These recipes are
nutritious, easy to prepare
and delicious. Menu
includes: quinoa cakes,
Thai green veggie curry,
mashed celeriac, beets and
mushroom pie, polenta
bake with cannellini beans
and spinach, and a spiced
lentil salad.

Moroccan cuisine is exotic,
and so flavourful yet
easy to make at home.
In this class we will make
Moroccan spiced chickpea
soup, minted cucumber
and tomato salad, chicken
tagine with almonds and
apricots, preserved lemons
and herb couscous, and
baklava.
Brunch is my favourite meal
of the day! Here are some
of my go-to brunch recipes.
Date scones, French toast
soufflé, homemade granola
and yogurt parfait and eggs
baked in ham cups with
mushrooms and spinach.
This class features a four
course Italian inspired
meal that is delicious and
easy. The menu includes
Pizzini (fried pizza dough),
toasted pasta with artichokes, chicken rolled with
prosciutto and cheese in
a Marsala wine sauce and
for dessert…what else but
Tiramisu.

Cooking with Herbs
Herbs are extremely healthy and can add some much flavour
to food. Come learn ways to store and preserve herbs so you
can enjoy them all year long. Menu includes: Roast chicken
with herb butter over fingerlings with herbs de Provence,
penne pesto with sun dried tomato and goat cheese, herb
salad with a parsley dressing, and herb stuffed fish fillet
roasted over asparagus.
