University of Tirana • Hasi goat breed is indigenous and is well adapted to the local climate; • Localized in mountains of Pashtriku (village Cahan), neighbor mountains Gajrep, Commune Gjinaj, etc., • Traditionally not use crossbreeding; graze in a well-defined geographical territory • No Transhumance (only 3-5 big flocks commune Golaj - to summer grazing Kosovo mountains) Type of products from Hasi Goat Breed • Hasi goat kid meat: ▫ high reputation for its special quality, grazing directly in pastures and forests. ▫ goat kids are weaned at 2-3 months, 16-20 kg live weight ▫ often they are kept with goats longer, getting higher daily weight gains as well as soft and tasty meat. • Pasterma (dried meat): ▫ traditional preferred during winter ▫ obtained only from the meat of adult animals ▫ placed in salt for two weeks, and after is hanged in a specific place to be air dried ▫ before being consumed, is first washed off the salt and then boiled. ▫ very tasty, especially when boiled with white beans. Type of products from Hasi Goat Breed (continue) Hasi goat cheese: • good reputation, specific taste required by the consumers • only 30-40 % of the milk under processing is skimmed • the fat preserving in the remaining milk determines its structure, taste, appearance, consistency, etc. • same procedure for producing cheese from totally un-skimmed milk Traditional Area of production Hasi district - Kosovo: Gjakova, Prizren Environment and Biodiversity • contrasting mountain area, rich in forests and pastures (22,000 ha forests and 3,000 ha pastures) • rich in aromatic plants, characteristics of mountain pastures • current numbers of the goat population in the area do not pose a biodiversity threat • the lowest density (1-3 SR per ha) • traditional method for landscape management and preservation • GI products will contribute to minimize the biodiversity threats • good potential for poverty alleviation: will help farmers to increase their income, valorize natural recourses Interest to protect • market for the product: high demand ▫ the product is sold at a better price : meat 400420 lek/kg lw; cheese 700-750 lek/kg ; • • • • there is not enough production (7.300 goats) there are counterfeits, high specificity linked with the territory the product has a link with biodiversity (local breed) Value Chain • 1.270 goat farms and 28.000 goats in the Region of Kukes • 178 goat farms and 7.300 goats in the district of Has – lower limit • mean flock size Has = 41 animals; Region of Kukes = 22. Collective action • not organized in association • the existing network of farmers and milk processor Milk Value Chain • only milk processing plant functioning in Has is in the village Cahan • most important dairy wholesale and retail market is Tirana Meat Value Chain • meat traders from Tirana and Durres buy live animals in place with a good price (400-420 lek per kg live weight of goat kids) • new slaughterhouse, administration municipality of Kruma, • capacity about 15 small ruminants per hour; the used capacity during 2012 was 1.500 small ruminants Proposed products for intervention Milk or Meat? ▫ Hasi goat kid’s meat ▫ Hasi goat dried meat, and ▫ Hasi goat cheese • Meat products: ▫ product standardization is easier ▫ food safety issues • Work on meat and milk at the same time, the producers of meat are also producers of milk • Support farmers with milk equipments Intervention area • Area of the mountain of Pashtriku, in the village of Cahan and neighbour villages of Mujaj and Kishaj • 60 goat farms; 2.800 goats • Criteria: ▫ road infrastructure, ▫ existing association in a restricted area, ▫ standardize the product in a small number of producers Type of Protection: GI • eligible to be GI and collective trademarks, • good potential for “organic”- extensive system
