Yeast Nutrient – Rehydration
LALVIN® GO-FERM
For Rehydration of Active Dry Yeast
LALVIN GO-FERM yeast nutrient from Eaton’s
Begerow Product Line is a new and innovative
yeast nutrient made of inactive yeast that contains
vitamins (e.g. panthothenate, biotin), mineral
nutrients (magnesium, zinc, manganese), and
amino acid.
LALVIN GO-FERM yeast nutrient contains
micronutrients that are absorbed only during the
rehydration step of active dry yeast.
A 15 to 30 minute waiting period is required for
reactivation of yeast cells. Please note, that rehydrated
yeast cells will not withstand great temperature jumps
(max. Δ 16 – 20 °F (8 – 10 °C)) during 1 hour. Yeast
cells rehydrated at a temperature of 77 °F (25 °C), for
example, should be used to inoculate musts that are
not cooler than 62.6 °F (17 °C).

Application
LALVIN GO-FERM yeast nutrient should be dissolved
in water (104 °F (40 °C)) prior to rehydration the active
dry yeast. After LALVIN GO-FERM yeast nutrient is
dissolved in water, the must should be added. The
optimal ratio LALVIN GO-FERM-water to must should
be 50:50 with a temperature of 86 – 95 °F
(30 – 35 °C).

LALVIN GO-FERM yeast nutrient aids specifically the
active dry yeast during the rehydration and is not a
replacement for nitrogen dosage prior or during
alcoholic fermentation. The yeast should be supplied

nutrients using SIHA Fermentation Salt yeast nutrient
(diammonium phosphate), using
SIHA Fermentation Salt Plus yeast nutrient
(diammonium phosphate, SIHA Vitamin B1 yeast
nutrient, cellulose) for intensively pre-clarified musts, or
using the combined preparation
SIHA PROFERM™ Plus combined yeast nutrient
(diammonium phosphate, ammonium, mineral
nutrients, and yeast cell wall extracts).

LALVIN GO-FERM yeast nutrient ensures that yeast is
supplied important micronutrients before it is added to
the must. Micronutrients are essential as enzyme
cofactors that control the transport of sugar into yeast
cells and to aid the intracellular metabolism of yeast. A
dosage of 2.5 lb/1,000 gal (30 g/hl) of
LALVIN GO-FERM yeast nutrient provides the yeast
approx. 0.58 gr/gal of alpha amino nitrogen per gallon
(10 mg/l).
Adding LALVIN GO-FERM yeast nutrient to rehydrated
yeast cells results in an increase proportion of active
cells throughout the complete alcohol fermentation.
The result is an assured fermentation activity and
increased resistance of the yeast to stress factors such
as nutrient deficiency, temperature shock and toxic
components.
Safety
Certified Quality
No safety specifications are required for
LALVIN GO-FERM yeast nutrient as this product is
used directly for food production. Storing, handling,
and transporting this product do not create health or
environmental hazards.
LALVIN GO-FERM yeast nutrient is inspected regularly
by Lallemand during the production process to ensure
uniformly high product quality.
Storage
LALVIN GO-FERM yeast nutrient is packaged in
polyethylene bags. The product is not vacuum-packed.
LALVIN GO-FERM yeast nutrient can be stored at
room temperature (max. 77 °F (25 °C)) for a period of
three years as long as the packaging remains intact.
These inspections include technical function criteria as
well as safeness in accordance with relevant laws
governing production of foods. Strict controls are
carried out immediately prior to and during final
packaging.
LALVIN GO-FERM yeast nutrient meets the purity
criteria of the International Codex for Wine Processing
Agents and complies with the German Wine Law.
