Coconut Flour Blondies
Coconut flour is ideal for use

Mix 1/4 cup sifted coconut flour and 1/4 tsp salt in a bowl. In another
bowl, mix 45g butter melted, 3 eggs, 1 tsp vanilla and 60g honey. Add the
dry ingredients to the wet and mix through until the batter has no lumps.
Add 70g chopped walnuts. Spread the batter evenly in a greased loaf
pan. Bake at 175°C/350°F for 20 minutes.

Serves 1
This tiny seed, descendant of the mint family, was a staple fare of Aztec
Warriors and Mayans, to provide them with stamina and endurance.
Now hailed as a modern day superfood, chia seeds are packed with
essential nutrients, antioxidants and minerals including calcium, fibre, iron,
manganese and phosphorous. Energy is released slowly and the usual
blood glucose highs and lows are avoided – no wonder it is hailed
as an ‘endurance food!’ Chia is also gluten free.

1 Cup Ruby Grove Organic Pomegranate
Juice
3 Tbsp Ceres Organics Chia Seeds
Preparation:
Pour juice into a jar with lid. Add the chia
seeds, cover and shake vigorously. Shake every
30 seconds or so for the next few minutes to
distribute seeds evenly. Pour into an ice-filled

Method
1/2 Ground Turmeric
Soak chia seeds in 1/4 cup of water for 3-5 mins.
1 Avocado, peeled
and sliced
Method
1. Slice leeks in half lengthwise and wash. Chop cross-wise into thin slices.
2. Rinse quinoa thoroughly.
3. Stir-fry leeks until they are limp. Add spices and mix well.
4. Add the rinsed quinoa and cook for a couple of minutes.
5. Add vegetable stock or water, tomatoes, currants and dried apricots. Bring

to the boil.
Lower heat, simmer covered for 15-20 minutes until cooked. Add sliced
avocado just before serving.
Place all the dry ingredients into large bowl and stir to combine.
Make a well in the centre and stir in the beaten eggs, milk and oil stirring as you
add each ingredient. Ensure the batter doesn’t go lumpy. Place to the side. Stir
your chia seeds and water together so they combine. Now add to the batter
mixture and mix thoroughly.
Pour batter into an oiled loaf tin and bake in an oven preheated to 180 degrees.
Bake for 30-35 mins or until a skewer comes out clean when inserted into the
centre.
Cool on a wire rack and serve with your favourite butter or jam.

CACAO
Raw cacao is made by cold-pressing roasted cacao beans. This process
removes the fat (cacao butter). It also contains more nutritional value (than
cocoa which is roasted at high temperatures changing the structure of the bean
and lowering the nutritional value).
Cacao comes in a number of different forms, including
butter, nibs and powder. Bin Inn stocks an assortment

CACAO BUTTER – is the pale yellow vegetable
fat extracted from the cacao bean. It is composed
of essential fatty acids such as Omega-6 which is
important for brain functions and helps maintain strong
bones and regular metabolism, and Omega-9 which is
good for the heart.
Tip: Use cacao butter to make yummy chocolate
treats or add it to desserts and ice creams.
CACAO NIBS
– are fermented cacao beans
crushed into small bits, almost like raw chocolate.
Cacao nibs contain anandamide, which is known
as the “bliss chemical” because it is released when
we are feeling great and is normally created by our
bodies when we exercise. Cacao is the only food to
contain anandamide.

The Facts on Gluten & Gluten Free Diets
What is Gluten?
Gluten is the protein aspect of wheat (including spelt, triticale
and kamut), rye, barley and oats. Gluten holds bread together
and makes it rise.
What is a Gluten Free Diet?
A gluten free diet involves excluding foods that are made from gluten containing
grains (see above). Gluten is the main protein in grains that are present in staple
foods such as breads, breakfast cereals, pasta, biscuits, cakes etc. Whilst
gluten is easy to detect in these foods, many processed foods contain ‘hidden
gluten’. This ‘hidden gluten’ refers to the additives, stabilisers, starches and
preservatives that may contain gluten. Despite these restrictions, people with
coeliac disease or who have a gluten intolerance, can eat a well-balance diet
with a variety of foods including gluten free bread and gluten free pasta.
Handy Hints for
Gluten Free Baking
•• When substituting wheat flours, recipes containing no more
than two cups of wheat flour tend to be more successful
than recipes needing larger quantities of flour.
•• If biscuit mixes made with gluten free flours are chilled for
half an hour before cutting and baking they will be easier to
handle.
•• Gluten free cakes cooked in ring tins often give a better

Ingredients:
2 Cups Ground Almonds
2/3 Cup Walnuts, chopped
2 Carrots, peeled and finely grated
1/2 Cup Gluten Free Icing Sugar
Sliced Almonds (to decorate)
Method:
Preheat oven to 160°C. Sift rice flour, maize cornflour, mixed spice, baking
powder and baking soda into a bowl. Mix in ground almonds, brown sugar,
grated carrots and walnuts. Separate eggs, add egg yolks. Using a cake
mixer, beat egg whites until stiff peaks form. Lightly fold egg whites into
mixture. Spoon into a 12 hole muffin tin lined with paper cases. Bake for
20-25 minutes or until cooked. Leave in tin for 5 minutes before placing on a
wire rack. Icing: In a bowl, beat cream cheese, icing sugar and orange juice.
Spread over cooled cakes, sprinkle with sliced almonds. Or bake a carrot
loaf in a 10cm x 20cm loaf tin for 50-60 minutes.

Method:
Preheat oven to 180°C. Combine butter and honey in a small pot and melt
over a low heat. Combine flour and cornflakes in a bowl and add to melted
mixture, stirring to combine. Roll into balls and place on a tray lined with
baking paper. Flatten with a fork and bake for 10 minutes or until golden.
Allow to cool on tray.
