Classic toad in the hole
Ingredients
Method
• 115g plain flour
1. Pour 2 tbs. rapeseed oil into a
18x28cm roasting tin and preheat in
the oven at 200°C/GM 6 ensuring all
sides are well greased.
• 2 egg (beaten)
• 125ml milk
• 2 tbs. rapeseed oil
• 6 rashers smoked streaky
bacon
• 6 pork sausages
• A handful of vine-ripened
cherry tomatoes
• A few rosemary leaves
• salt
2. Wrap 6 rashers smoked streaky bacon
around 6 pork sausages. Arrange the
sausages in the preheated tin and cook
until browned on all sides (approx. 10
minutes).
3. Sieve the flour into a bowl,
making a well in the centre and
break the beaten eggs into the
well adding half of the milk and
a pinch of salt. Draw in the flour
with a whisk, then gradually add the
remaining milk.
4. Pour the batter over the sausages.
Dot the batter with a handful of vineripened cherry tomatoes and a
few rosemary leaves and return to the
oven for 30-35 minutes, until risen and
browned. Serve with onion gravy.
