Ingredients "Reformulation for Sweets and Snacks"
Reformulierungen, d.h. Änderungen der Rezepturen im Lebensmittel- und
Getränkebereich, sind ein hochaktuelles Thema. Aktuell im Trend liegen die
Reduzierung von Fetten, Zucker und Salz sowie das Interesse an Alternativen oder
Ergänzungen zu tierischen Produkten.
Was sind hier mögliche Chancen und Alternativen? Wo liegen die Grenzen der
Reformulierung und der Reduzierung? Was ist im Umgang mit neuen Zutaten wichtig
zu wissen?
Diese Fragen werden auf der ProSweets Cologne 2017 beantwortet. Die DLG
präsentiert die Sonderschau „Zutaten – Reformulierung für Süßwaren und Snacks"
und Führungen mit dem Schwerpunkt „Reformulierung". Die Führungen umfassen
den Besuch der Sonderschau und von Messeständen, an denen interessante Einblicke
in das Thema Reformulierung vermittelt werden.

Reformulation of food and beverages is a hot topic. Current trend is the reduction of
fats, sugar and salt as well as the interest for alternatives or supplements to animal
products.
What are possible opportunities and alternatives? Where are the limits of reformulation
and reduction? What is important to know in handling with new ingredients?
These questions will be answered at ProSweets Cologne 2017. The DLG will present a
special display “Ingedients – Reformulation for Sweets and Snacks” and Guided
Tours with focus on “reformulation”. The Guided Tours will lead through the special
display and to fair stands, which will give interesting informations about reformulation.
