Even Mauritius, leader of the Roman legion that occupied the site around 300 AD, could have enjoyed the celebrated local waters: the springs were first tapped in the Bronze Age, as a visit to the village’s Engadine Museum will attest. The waters, which are rich in carbon and iron, are still used for a wide range of drinking and bathing cures. Den Knoblauch und die Oliven im Olivenöl andünsten. Die Tomatenwürfel, das Tomatenpüree und eventuell etwas Sambal Oelek dazugeben und alles 15–20 Minuten leise köcheln lassen. In der Zwischenzeit die Auberginenwürfel in Olivenöl braun braten. Dann zusammen mit den Kapern zur Tomatensauce geben, kurz erhitzen und mit Salz und schwarzem Pfeffer abschmecken. Die Basilikumstreifchen beigeben. Die Teigwaren auf einen Teller geben, die Sauce darüber giessen und die gerösteten Pinienkerne darüber streuen. Rührei mit Champignons
