WINEMAKER’S NOTES
In our house, simplicity and kindness are the fundamental
values by which one gathers around a table for any occasion
and only a distracted observer can confuse this simplicity
with mediocrity. Straw yellow color with green reflections.
Notes of apricots and honey. On the palate, exotic fruit
flavour, taste and softness unite. Serve fresh at a
temperature of 12° C.
FOOD MATCHING
Perfect if combined with any fish, crustaceans, and
introductory dishes. Magnificent with fried fish.

Vinification in white with maceration of the skin for 12 hours,

WINEMAKER’S NOTES
Cherry-colored with an intense fruity bouquet that comes from
our best Syrah. Notes of strawberry, cherry, raspberry and
pomegranate. In one’s mouth the wine is fresh with a good
acidity and balanced tannins. It’s certainly not a wine for
undecided palates.
FOOD MATCHING
If served fresh it’s the perfect companion for light salad-based
lunches, and the most demanding grilled dinners. Sublime star
of any barbecue.

The grapes are vinified in stainless steel for 12 days with
skin contact at a temperature of 26°-28°C. After malolactic
fermentation, the wine matures for about 4 months in
stainless steel tanks.

Bottle fining for at least 2 more months follows.
WINEMAKER’S NOTES
It’s what we can perfectly define as the everyday-wine. Deep
ruby and crystal clear it offers a wide variety of aromas
highlighted by liquorice and raspberry.
FOOD MATCHING
Can easily climb the Food Pyramid having a preference for
vegetables, legumes and white meat. Not to be missed with
“Arancine” or “Caponata”.

Elegance and freshness are the main characteristics of the
Grecanico produced in our vineyards of “Terre di
Giumara”. Grapes are hand picked and then gently
crushed. Intense and fine. Its color and brightness
anticipate a richness of fragrances with wide and varied
shades. Its aroma is characterized by white fruits with
orange blossoms. It is fresh- tasting, pleasant and scented.

fruity, crisp and soft. In one’s mouth it is persistent and intense.

WINEMAKER’S NOTES
Only one third of the wine is aged in tonneaux for 4
months, just the needed time to build some structure
without compromising the freshness. The wine strikes with
its density and its violet tonalities. In one’s nose is rich of
scents, deep and pure. Mature red fruits merged with
herbs and prunes. Expresses excellent varietal character,
and exhibits smooth, velvety tannins and incredibly
harmonious balance.
FOOD MATCHING
Impossible not to imagine a glass of Terre di Giumara
Nero d’Avola when eating tomato sauce-based pasta or just
grilled meat. Try it with sausage or rind ragout pasta.

Grillo vines are the flagship of our varieties. For this wine
we have chosen the highest hill in order to exalt its
freshness and flavour. We put it into tonneaux to trap its
body giving it a delicate note of oak and acacia. Such good
care for a wine symbol of western Sicily. Intensity and
elegance are the perfect mix of this wine. Wide bouquet
with a natural delicacy.

The most refined fish and vegetable-based pastas are the
perfect match for this wine. Quite surprising how it can

For decades the Perricone, or the so-called pignatello, had
been the undisputed leader of the red grapes in western
Sicily. A careful vinification has transformed the prickly
character into a incomparable personality: a one of a kind
wine. Rich with red fruits, mixed with notes of liquorice, a
typical expression of the relationship between the variety
and its land. Wine of great power and harmony while
expressing, at the same time, a fresh and lively character.

There is a deep bond between the catarratto and this area
of Sicily; a special relationship that we wanted to keep
unblemished with every sip of this wine. Complex on one’s
nose, dominated by fresh notes and citrus fruits. Light
appearance of sweetness caused by the notes of honey. It’s
full and fresh in one’s mouth with an elegant persistence.

The great personality of this wine can be perfectly combined
with sauced and elaborate white-meat dishes, but best
matches cous-cous.

The vineyards are situated in the surroundings of Mazara
del Vallo, past the gravel bank of the river. This testifies to
the presence of the typical water-rounded stones called
“Cuti”. Thus, the name of this wine is derived from the
originality of its soil which makes it both unique and
special. Complex and intense. Mature red fruits like currant
and prune merged perfectly with herbs and scents of cocoa.
It’s spicy, silky and persistent.

Rich and powerful wine that goes well with elaborate dishes
such as baked-pasta, grilled game or beef.

WINEMAKER’S NOTES
It shouldn’t be a surprise that our top red is made of a
non-indigenous variety; Syrah is the best-known black grape
in the western Sicilian soil. Two years of ageing in 5
tonneax have give it the Riserva Apellation. A combination
of power and smoothness is supplemented by a touch of
fruitiness and notes of florals and are made intriguing by a
thin vein of oak. The harmonious roundness found in one’s
mouth does not affect the fragrance of the fruit.

A strong wine that plays a main role at any table where it’s
served. However, it maintains respect for all types of dishes,
even the most delicate ones.

VINIFICATION
Careful selection of the grapes, picked by hand after being
dried on the plant, de-stemmed by hand and maceration
with the skin at a low temperature. After being soft pressed,
the must is fermented in tonneaux, already used for
Timpune. Once the desired alcohol level is reached, the
temperature is lowered to stop fermentation.
AGEING
4 months in tonneaux where fermentation took place
followed by a short stop in stainless steel before bottling.
WINEMAKER’S NOTES
The lovely result of a long wait. Bright colour with intense
golden reflections, balanced bouquet with scents of fruits
and flowers, notes of honey and cinnamon follow. The wine
is pleasurable on the palate due to its sweetness, sapidity
and softness. Great structure.

It’s a perfect dessert wine. It calls either for cheeses or
sweets.

DESCRIPTION
Terre di Giumara Olive Oil is a highly prized extra virgin olive oil
that is cold pressed from olives grown in the heart of the Belice
Valley. The olive groves are on approximately 14 hectares of land
with a total of 3600 trees that produce olives, all picked by hand:
the meticulous care and the great dedication give successful to this
fine product.
ASPECT, TASTE AND AROMA OF THE OIL
Lightly veiled, obtained by natural decantation (not filtered). Fruity
of olive oil, harmoniuous and fresh with a light piquant touch and
a pleasant perception of bitterness. Features notes of tomato,
artichoke, citrus and almond. Clean of olive oil aroma.
SERVING SUGGESTIONS
A versatile oil that excels when used raw to baste even delicate
dishes of meat and fish as well as preparations of vegetables and
salads. Due to its high quantity of antioxidants, it’s an extremely
genuine product. It can also be used for cooking thanks to its
