This is the headline result of the 2015 survey of National Coffee Drinking Trends carried out by the US National Coffee Association (NCA), which has kept a finger on the pulse of the nation’s coffee-drinking habits since 1950. Published at the annual NCA Convention in Charleston, this year’s report presents a number of new features including an interactive platform which allows the personalisation of data in accordance with the various needs of the industry’s competitors. In addition to the traditional variables such as age, gender and ethnic identity, the report explores more complex criteria concerning product awareness and experience – all supported by a broad range of historical statistics. Demand remains steady, then, with small trend variations within the margin of error. Of the people interviewed, 78% said they had drunk coffee last year (1% less than last year’s survey result), 71% (against 73%) the week before and 59% (61%) the day before. Coffee in servings remains the main market driver. Twenty-seven per cent of consumers own a capsule or pod coffee-maker and another 12% plan to buy one. Though the age breakdown shows a drop in consumption among the youngest group (18-24), it does not affect espresso-based products, which are particular popular with the under40s. Patterns of coffee consumption during the day are changing. The proportion of interviewees who drink coffee with their breakfast has fallen to 81% – six percentage points less than three years ago. But this is offset by a five-percent increase in the number of people who have a coffee in the afternoon – an indication that lifestyle habits are evolving. Así, el 78% de los encuestados (en comparación con el 79% del año pasado) afirma haber consumido café el año anterior, el 71% (73%) la semana precedente, y el 59% (61%) el día anterior. El café en porciones continúa siendo el principal motor del mercado, ya que el 27% de los consumidores declara que tiene en casa una máquina de café de cápsulas o monodosis, y el 12% que está planeando comprarla muy pronto. Además, la estratificación de los resultados indica que el consumo disminuye en el grupo de edad de los más jóvenes (18-24), pero que ese descenso no afecta a las bebidas a base de espresso, ya que estas gozan de gran popularidad en el rango de los que tienen menos de 40 años. AMSA will collect the grounds, which will then be transferred to the associations involved in the project and taken to the collection centres run by the social cooperatives. All Colombian coffees are 100% mild washed Arabica and are grown at altitudes ranging from 1,000 to 2,300 meters above sea level. Coffee is grown along three different mountain ranges of the Andes as well as in the Sierra Nevada of Santa Marta. Approximately 563,000 coffee growing families in 588 municipalities of 20 departments in Colombia are involved in the coffee sector. The entire coffee zone is comprised of 3.3 million hectares, with the coffee growing area totaling 931,000 hectares. 95% of Colombia’s coffee is produced in plantations that are 5 hectares or less, with the average plantation size being 1.6 hectares. While Colombian coffee production exceeded 12 million bags in the 2013-2014 coffee year, according to the latest data from the Colombian Coffee Federation (FNC), it has been a long road for Colombian coffee sector, overcoming and enduring many struggles and obstacles. With the majority of the country’s coffee owned by smallholders, Colombia appears to be more vulnerable to the lows of the notoriously volatile market. In February 2013, Colombian coffee producers took to the streets to engage in a national strike, which shut down production and transportation for the sector in hopes of persuading the government to provide additional support to the sector. According to the USDA, coffee producers estimate a current production cost of Colombian pesos (CP) $750,000 (US$425) per 125 kilogram bag of green coffee. As a result of the protests, the government reacted with a subsidy agreement, entitled Protection for the Income of Farmers (PIC), which took effect on March 18 2013, and ensured growers a minimum internal floor price of CP$480,000 (US$270) per bag and an additional CP$145,000 (US$80) per bag in the form of a direct payment. The government also raised the subsidy for small farmers with less than 20 hectares from $33 to $63 per bag. Additionally, if the international coffee price falls below CP$480,000 the total amount of GOC financial assistance will increase through 2013. En febrero de 2013 los productores colombianos salieron a la calle y organizaron huelgas en todo el país, porque querían convencer al Gobierno para que adoptara medidas adicionales que apoyaran al sector; dichas huelgas paralizaron la producción y el transporte. Según el Ministerio de Agricultura de Estados Unidos (USDA), los productores colombianos estiman que en la actualidad los costes de producción de una carga de café verde (1 carga = 125 kg) ascienden a 750 000 pesos. Tras las protestas, el Gobierno decidió introducir un subsidio denominado “Protección del Ingreso Cafetero”, que entró en vigor el 18 de marzo de 2013. Mediante este, se les garantiza a los productores un precio mínimo de 480 000 pesos por saco, y 145 000 pesos más en forma de pago directo. De forma simultánea, el Gobierno incrementó la ayuda a los pequeños productores que contaban con menos de 20 hectáreas, de 33 a 63 dólares por saco. Más tarde el Gobierno redujo la cuantía de las subvenciones, porque los precios subieron por encima de los 700 000 pesos. Tras un devastador brote de roya, la FNC acometió un programa de renovación de los cultivos en todo el país, y entre principios de 2009 y junio de 2014 se sustituyeron en Colombia 3051 millones de arbustos, lo que supuso la renovación de 575 000 hectáreas o, lo que es lo mismo, del 60% de la superficie total cultivada con café, y la creación de una densidad de implantación más elevada. El 74% de los nuevos arbustos (2262 millones de plantas) pertenece a variedades resistentes a la roya, y la edad media de las plantaciones bajó de 12,4 a 7,3 años, lo que se ha traducido en un rejuvenecimiento y en un aumento de la productividad. Se trata, al menos en apariencia, de un gran éxito, aunque Colombia aún no está completamente fuera de peligro. En sus investigaciones, el CENICAFÉ selecciona diferentes variedades, con el fin de identificar la que más se adapte al ecosistema único en el que se cultiva el café en Colombia. Según Álvaro Gaitán, responsable de Fitopatología del CENICAFÉ, “En los programas de selección, los científicos colombianos han utilizado la variedad Caturra como uno de los arquetipos, con el fin de crear las variedades resistentes Colombia y Castillo, cuya difusión inició en 1982”. Y añade: “Cultivamos las especies de café Arábica desde hace más de 200 años. Sin embargo, las variedades han ido cambiado con el paso del tiempo, y hoy día muy pocas veces se plantan la Typica o la Bourbon. Por lo que respecta a otras, la Caturra se ha reducido hasta el 35%, mientras que la Colombia y la Castillo son las que predominan en la actualidad”. The most popular varieties of Arabica, Typica and Bourbon, were widely cultivated in Colombia until the 1960s. Then, the Caturra variety from Brazil was introduced to Colombia and reached almost 75% of the cultivated area. Por esta razón, el CENICAFÉ habla del enfoque de “resistencia multilineal”. La evolución del clima representa otra fuente de preocupación. En septiembre del año pasado estuvimos en Antioquia, y vimos que los productores estaban muy preocupados por la falta de lluvia. If there is not enough sun, the fruit will not be produced.” Samper emphasizes however that flowering usually takes place in February/March, so there is still hope for weather to help and improve crop conditions. “However, with rains and excess humidity can come rust (roya),” says Samper. “It is well known, in coffee and other crops, that pathogens will overcome resistance at some point in time,” explains Gaitan. “The pathogen acts like a ‘hacker’ and tries in a systematic way to find a gene combination that enables it to attack the plant. This is a natural phenomenon that is promoted through mutations in the genome of the pathogen. Out of billions of spores produced each season, a few mutants will have the right combination that can break the resistance.” “Since the 1990´s we have been detecting this ‘brake of resistance’ in our rust resistant varieties Colombia and Castillo. To counteract these events, Colombian breeders have used biological diversity, and instead of using a single genetic line of coffee, they made a mixture of 40 or 26 27 CoffeeTrend magazine April I Abril 2015 empezó a llover. Por su parte, Gaitán sostiene que “Se sabe que en el caso del café y en el de otros cultivos, los agentes patógenos conseguirán penetrar las defensas tarde o temprano”. Y continúa diciendo: “Los agentes patógenos actúan como un pirata informático, es decir, buscan sistemáticamente una combinación de genes que les permita atacar la planta. Se trata de un fenómeno natural, causado por mutaciones en el genoma del agente patógeno. Considerando los miles de millones de esporas que se producen cada temporada, solo un pequeño número de esporas mutantes tendrá la combinación exacta para superar la resistencia”. Por último, explica que “Desde los años noventa hasta ahora hemos localizado esta `ruptura de la resistencia´ en nuestras variedades Colombia y Castillo. Para contrarrestar este efecto, los especialistas colombianos se basan en la biodiversidad, y en lugar de utilizar una sola línea genética han creado una combinación de más de 40 líneas genéticas, obteniendo una Variedad Compuesta. De esta manera, aunque la roya siempre podrá encontrar una combinación genética válida para atacar una sola línea, será difícil que pueda hallar una combinación eficaz para todas las líneas; esto nos proporciona una `resistencia duradera´. From Laboratory to Coffee Farm Regional “strands” of the Colombia variety allow farmers to plant coffee that is more specifically designed for the conditions of their farm. These regional varietals of Colombia produce 12% more than the “general” Colombia variety, which in turn has higher yields than Caturra. Currently, Cenicafe has 7 regional varieties and expects to generate a few more to respond to additional needs. At least 12 years of research must be spent testing new varietals before they can be planted in coffee fields throughout Colombia. Cenicafe studies the behavior of new varieties in order to determine their production capacity, ability to adapt, resistance to rust and quality in the cup. “Once the components of a new variety are defined, we must guarantee that the seeds are properly produced and distributed at a very low price. We control the seed production fields, and have a traceability system to determine where each bag of seeds is coming from,” says Gaitan. After the farmer is able to receive the new varieties, assistance is then provided aiding them throughout the germination. “During the selection process in coffee breeding, multiple regional assays must be carried out in order to see the effect of the environment in the plants,” explains Gaitan. “Colombia is very rich in geographic diversity (altitude, soils, thermal amplitudes, rain and sunshine patterns), and the data from those experiments indicated us which genetic lines can be used across the county and which ones give better results only in certain places. 28 29 CoffeeTrend magazine April I Abril 2015 más presente en plantaciones situadas en zonas más altas que superan incluso los 1600 metros, y compite de igual a igual con variedades tradicionales que no son resistentes”. Gaitán afirma que “Una vez que se han definido las características de una nueva variedad, debemos garantizar que las semillas se produzcan correctamente, y que cuando se distribuyan cuesten lo menos posible. El CENICAFÉ sigue trabajando para crear tecnologías que ayuden a que el café se adapte al cambio climático, y lo hace mediante la selección de las variedades del futuro, que deberán ser resistentes a enfermedades y plagas, habrán de tener una mayor capacidad de adaptación a las condiciones medioambientales cambiantes, tendrán que asimilar más los nutrientes, y deberán poseer propiedades organolépticas aún mejores, si es posible, que las variedades actuales. Para concluir, Gaitán alega que sabedores de que “estas variedades no constituyen en sí la solución del problema, la selección ha de ir acompañada de otros elementos como la agroforestería, la conservación de la rica biodiversidad de las plantaciones, la gestión integrada de las enfermedades y plagas, y el uso eficiente de los recursos hídricos y humanos”. La siguiente hazaña de Opem sigue la línea de lo recordado por Ombretta Sarassi: de los pads se pasó posteriormente a los sistemas para K-Cup que fabrican cápsulas. También en este caso fue fundamental el impuso de una multinacional americana, Green Mountain. As well as hosting the third semi-final of the Italian coffee roasting championship, they organised an open day for anyone interested in a deeper understanding of the roasting processes which have such a strong impact on the quality of coffee in the cup. At the main company facility in Sant’Agostino, in the province of Ferrara, things got under way on Wednesday March 4th with the start of the third round of selection in the Italian roasting championship, part of the World Coffee Event circuit promoted by the Speciality Coffee Association Europe (SCAE). Now in its second year in Italy, the competition had a packed three-day programme which showcased the complexity of the green coffee sector, coffee processing and the broad range of expertise required of the people working in it. Senior master roaster Marco Cremonese, in charge of organising the competition, said in an interview, “At the beginning most of the interest was from small roasters who work independently and run small-scale sales operations. This year’s competitors include people from bigger companies who exercise their skills in an industrial environment. The desire to come out and measure yourself against people with different experiences is a positive development – a form of mutual enrichment which can only benefit the industry as a whole.” This is the philosophy behind the first Petroncini Open Day, designed by the company for anyone wishing to find out about the secrets of roasting and the equipment involved in it. La primera Jornada de puertas abiertas de Petroncini se basó precisamente en este principio. It used to be said that coffee roasting was an art, and for the master roasters overseeing every phase of the roasting process that still holds true. But today technological innovation is within the reach of an increasing number of operators, not only the big players, with accessible costs even for entry-level equipment. “I would say coffee roasting is a science,” observed Petroncini Impianti product manager Roberto Pedini. “A science whose basis is the comprehension of what happens physically and chemically in the coffee bean during the various stages of roasting. Hence the capacity to define specific green coffee cooking processes, that is to say known roasting profiles which selectively enhance, inhibit or develop particular aromatic properties contained in raw coffee. What is perhaps most fascinating is that today all those things are increasingly measurable and amenable to intervention, even using small roasters like our new TT 8kg batch, but with a more dynamic and intuitive approach, less tied to the sole parameter of cycle duration, so that in each stage of the roasting process our machine knows exactly what to do and how to intervene. A Gotemburgo se desplazarán miles de personas La SCAE está desarrollando una gran campaña de marketing en los medios de comunicación, mediante la que desea promover la colaboración entre la “World of Coffee” y sus socios, a fin de que miles de expertos de café de todo el mundo acudan al evento de Gotemburgo, que durará tres días.
